SCOTTS GAME
Ian Scott is a game dealer based out of Gledstone Hall in North Yorkshire, England.Scotts game is a market favourite as he promotes a sustainable way of eating meat by keeping suppliers local and only travelling within a certain distance to trade his wares. I had the opportunity to spend a weekend in October 2019 documenting what he does to get ready for a market day in Skipton and Grassington.
Ian Scott stands proudly by his stall on Grassington Market which happens once every Sunday of the month. Selling a wide range of game meat, he promotes a sustainable way of eating meat by discussing with his customers where the game has come from and how to prepare the food.

When there is a large pheasant and fowl delivery, they are hung up on the rail outside Scott's room making it more efficient to grab the birds and prepare them.
